why do heart cells have a higher percentage of mitochondria than liver and pituitary gland cells?

Answer:

This is because the heart requires large amounts of energy in order to pump blood to the rest of the body. The mitochondria produces ATP for energy, thus heart cells contain a higher percentage of mitochondria for energy to pump blood.
